Decaffeinated with Ethyl Acetate (EA)
The Sugarcane process is named after ethyl acetate, or EA, which is used to decaffeinate the coffee. EA is a natural compound derived from sugarcane that can be found in fruits and other foods. Derived from sugar, EA binds with the chlorogenic acid found in caffeine. Once EA binds with the chlorogenic acid, the process of separating caffeine from the coffee bean begins.
