A Luoi coffee was once a key coffee-growing region of Central Vietnam, alongside Khe Sanh coffee. After more than 10 years of absence, Greenfields Coffee has revived high-quality coffee in Hue. The coffee is harvested, processed and roasted to create a Hue Specialty Coffee found only at Greenfields Coffee.
A Lưới coffee was once a key coffee-growing region of Central Vietnam. Grown at an altitude of 600–800 m, it carries the distinctive coffee flavor of the Imperial City region. The coffee has notes of tea rose, ripe fruit and honey, a delicate sweetness and a balanced acidity.
A Lưới Arabica wet-processed coffee
When the harvest season arrives, coffee cherries are picked ripe by hand. The cherries are then pulped to remove the outer flesh, leaving the parchment coated in a sugar-rich mucilage, and the parchment is soaked in water to ferment. Once fermentation is sufficient (about pH 4.5), the mucilage is washed away; by this point it has broken down and separates easily from the parchment. The parchment is then dried, usually on raised beds, until it reaches a moisture content of about 12.5%, and is then put into storage.
A Lưới Arabica dry-processed coffee
Among coffee processing methods, the dry (natural) process is the oldest and the most natural. It gives coffee a more complex flavor than other processes, and controlling natural fermentation is much harder. Traditionally it has also been the simplest method: whole cherries are picked and sun-dried with the parchment beans still inside.
Depending on the weather, a dry-processed batch can turn out excellent or poor. On sunny days dry processing is easy: cherries dried under the strong sun shrivel up like bananas, jackfruit or grapes being dried. The fermentation of the cherries slows down and stops once they are dry enough.
Today, as people study coffee processing more deeply, dry processing has been adopted by many producers to create cups full of aroma and richness.
